PURPOSE: To obtain a mix for potato dough capable of mass producing a food such as cake or daily dish having flavor and texture of characteristic potato and to produce potato dough and a fried food using the potato dough.
CONSTITUTION: Gelatinized potato flour or gelatinized potato flake alone or its mixture is used as a main component and mixed with a saccharide and a thickening agent to give mix for potato dough. The gelatinized potato flour or gelatinized potato flake or mashed potato prepared by steaming or boiling potato and grinding alone or its mixture is used as a main component, mixed with a saccharide and a thickening agent and kneaded with water to produce potato dough. The gelatinized potato flour or gelatinized potato flake or mashed potato prepared by steaming or boiling potato and grinding alone or its mixture is used as a main component, mixed with a saccharide and a thickening agent and kneaded with water, made into a proper size and fried to give a fried food.
