Abstract:
To provide a deep-fried food flour mixture which can prevent decrease in texture in deep-fried food after frying with oil.SOLUTION: A deep-fried food flour mixture includes: (A) wheat flour; (B) 1 to 30 mass% of a total amount of at least one type of starch selected from a group consisting of tapioca starch, potato starch, waxy corn starch, and processed starch thereof; and (C) 0.05 to 5 mass% of a total amount of at least one type of thickening polysaccharide selected from a group consisting of alginic salt, alginic ester, and locust bean gum.SELECTED DRAWING: None
