Abstract:
To provide a mixed powder for rice flour bread retaining excellent swelling and palate feeling in spite of containing no gluten and retaining excellent palate feeling for a long time, and to provide a bread dough for rice flour bread, and a method for producing rice flour bread.SOLUTION: Due to that a mixed powder for rice flour bread, and a bread dough for rice flour bread contain psyllium and soybean flour in a specific range, based on rice flour as the main ingredient, the mixed powder can constitute rice flour bread including excellent swelling and palate feeling in spite of containing no gluten, and retaining excellent palate feeling for a long time. The rice flour bread thus obtained can avoid the so-called problem of gluten-containing bread (wheat flour allergy or the like) due to containing no gluten, and can lead to consumption expansion of inexpensive rice or rice flour. Additionally, the mixed powder becomes gentle to the body and the nature due to being composed only of nature-derived materials.SELECTED DRAWING: None
