Abstract:

To provide a method for modifying edible oil and fat by bringing it into contact with tourmaline or tourmaline-compounded ceramic.

This method modifies edible oil and fat for frying (e.g. soybean, sesame, rape seed, palm and olive oil) by bringing it into contact with tourmaline or tourmaline-compounded ceramic, held in a porous stainless steel container and suspended or settled in the oil and fat in a pan or tank.
