Abstract:
PROBLEM TO BE SOLVED: To develop a modified enzyme by searching an active center site of an enzyme that has conventionally been not noticed on a dextransucrase and a glucosyltransferase and by exchanging the sites between different enzymes, and to provide a method for producing a glucan having a largely changed structure by using the enzymes.
SOLUTION: Disclosed are a modified dextransucrase comprising exchanging a part of the active center region of the dextransucrase for an active center region of a different kind of dextransucrase, a vector transduced by a gene encoding the modified dextransucrase and a gene recombinant transformed by the vector, and a method for producing the glucan featured by acting the modified dextransucrase on a substrate.
