Abstract:
PROBLEM TO BE SOLVED: To provide mold release oil which has good release ability, achieves good flavor and texture of baked food product, and suppresses leakage from the baked product, and a production method thereof.SOLUTION: The mold release oil of the invention comprises high melting point fat powders, and the high melting point fat powders comprise powder grains which can pass 100 mesh. The production method of the mold release oil of the invention is configured so that the high melting point fat powders are added to fat from which the high melting point fat powders which are a raw material of the mold release oil are removed, at a temperature less than the melting point of the high melting point fat powders.SELECTED DRAWING: None
