Abstract:

PURPOSE: To obtain the title mold releasing oil satisfying both mold releasing effects and taste and flavor of food by blending food-derived fats and oils with lecithin and a calcium-containing compound.

CONSTITUTION: Food-derived fats and oils are blended with lecithin and a calcium-containing compound (preferably calcium carbonate, calcium phosphate, calcium chloride, calcium sulfate, bone meal, eggshell or shellfish powder) to give the objective mold releasing oil.
