Abstract:
To provide a molded food product without reduction in binding strength or adhesion to hands and fingers or teeth caused by moisture absorption, which does not have problems of a change in palate feeling, a change (reduction/elimination) in a nutrient component of a nutrient-enriching material, or the like, caused by moisture transition from a moisture-absorbed binding agent to a raw material.SOLUTION: The molded food product includes a food product raw material and a binding agent, where the binding agent is a water-soluble dietary fiber. The water-soluble dietary fiber is preferably at least one kind selected from hardly digestible dextrin, inulin, high amylose corn starch, phosphate cross link-resistant starch, polydextrose, isomaltodextrin and enzymatically hydrolyzed guar gum; and the food product raw material is preferably selected from grains, bean or corm powders, rice flakes, corn flakes, cereals, nuts, processed products of fruits and/or vegetables, proteins, non-water-soluble dietary fibers, vitamins and minerals. Moreover, it is preferable that the water-soluble dietary fiber exists on a surface of the adjacent food product raw material and that the food product raw material is bound by the water-soluble dietary fiber.SELECTED DRAWING: None
