Abstract:
PROBLEM TO BE SOLVED: To provide a molded laminated base material capable of providing pastry foods good in dough floating, having new texture which is crispy in an outside and moist in an inside, and especially excellent in flavor of butter, and a manufacturing method of the molded laminated dough.SOLUTION: A molded laminated dough is a dough by overlaying a laminated dough A and a laminated dough B, the laminated dough A contains a roll-in oil and fat composition X, SFC at 25°C of oil and fat in the oil and fat composition X is less than 15%, the laminated dough B contains a roll-in oil and fat composition Y, SFC at 25°C of oil and fat in the oil and fat composition Y is 15% or more and the laminated dough B is arranged in outer side than the laminated dough A.SELECTED DRAWING: None
