Abstract:

PROBLEM TO BE SOLVED: To provide a variant microorganism enabling an yellow coloring matter to be produced directly in a solid or liquid medium by the use of inexpensive naturally occurring raw materials without involving further processing operation, to provide a method for producing a yellow coloring matter by the use of the mutant microorganisms, and to provide a yellow coloring matter containing only a small amount of citrinin.
SOLUTION: This variant is a variant of the microorganism Monascus prupureus, being called Monascus prupureus M011. The 2nd objective method for producing a yellow coloring matter by the use of the variant and the other objective yellow coloring matter containing only a small amount of citrinin are also provided.
