Abstract:
To provide a method for producing a mozzarella type string cheese product, and to provide a cheese product produced by the method.
This method for producing the mozzarella type string cheese product comprises (a) a step of preparing cheese curd, (b) a step of obtaining a cheese product through heating, kneading, pressing and extending the cheese curd together with desired arbitrary ingredients in a direct steam jetting mixer/cooker for sufficiently mixing to keep about <70°C temperature, using steam directly jetted to the cheese curd, (c) a step of extruding the cheese product and (d) a step of cooling the extruded cheese product.
