Abstract:
PROBLEM TO BE SOLVED: To provide a multilayered dessert having at least one heat-treated component containing mousse, cream, jelly and/or sauce, provide a process for producing the dessert and provide an apparatus therefor. SOLUTION: The components of the multilayer dessert such as mousse, cream, jelly and/or sauce are coated with a fat coating or a continuous aseptic chocolate layer having a thickness of 0.1-3mm or these components (7, 8, 9) are separated from each other by fat coating layer or continuous aseptic chocolate layer (10, 11) having a thickness of 0.1-3mm. At least one of the above components has a Bostwick viscosity of <8cm.
