Abstract:

To produce a starch having high whiteness by separating mung beans to a fruit part and a coat part, and using only the fruit part.

Washed and soaked mung beans of raw materials are subjected to a collapsing roller to separate the mung beans into a fruit part and a coat part, and only the resultant fruit part is ground to provide a ground powder. The objective mung bean starch is produced by using the obtained ground powder.
