Abstract:

PURPOSE: To provide the subject new compounds showing an anti-oxidant action, an emulsifying effect, a germicidal effect, a chelating force, ultraviolet absorptivity, moisture retention, etc., and useful as an antioxidant and an emulsifier.

CONSTITUTION: Compounds of formula I [(NH-X-CO) is amino acid residue and X depends on kind of amino acid; R-CO is 6-24C fatty acid residue; R1 is H, Na, K or methyl; n is 1-3 and one or more histidine are contained as constituting-amino acid], e.g. III N-oleoyl-carnosine. The compound of formula I can be obtained by reacting an N-hydroxysuccinimide ester of formula II with an amino acid or a peptide of formula III.
