Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing roasted mushroom retaining its excellent taste even after preserved for a long period.
SOLUTION: Raw mushroom washed with water is roasted by far-infrared heating and then air-dried to adjust the water content of the roasted mushroom to 30-50wt.%, and the mushroom is then put into a packaging form with resistant to heat and freeze followed by deaeration and sealing and then conducting a heat sterilization under pressure, thus obtaining the objective roasted mushroom.
