Abstract:
PURPOSE: To obtain the subject raw material without generation of browning or a heated odor and having excellent palatability by treating soybean from which more than half of water-soluble sugar fraction in removed by elution with water from raw material soybean by using a twin extruder.
CONSTITUTION: Whole soybean or skin-peeled soybean from which ≥50% of water-soluble sugar fraction is removed by elution with water from raw material soybean is treated in a twin extruder to obtain lightly yellow white soybean protein food raw material. This raw material has fish meat-like or livestock meat-like fibrous property and texture, not generates collapsing oven in the case of well-boiling and does not scorch by the contained lipid.
