Abstract:

PROBLEM TO BE SOLVED: To obtain a roast sugar and a food blended with the roast sugar such as a super premium ice cream including a vanilla essence reduced to a half amount while keeping the flavor level and chocolates having reduced foreign, bitter and astringent tastes, and a food utilizing the chocolates.
SOLUTION: This roast sugar is produced by heating and roasting sugars in a dry air up to 140-150°C and has 0.15-0.95 absorbance of light having 280nm wavelength in an aqueous solution of 2.5wt.% concentration. The roast sugar is used for a super premium ice cream or chocolates, and a food utilizing the chocolates by adding the roast sugar thereto is obtained.
