PURPOSE: To profitably obtain the subject compound which is a kind of vitamin and which is useful for nutritive foods, feed additives, medicines, etc., by culturing a new microorganism belonging to the genus Candida and having an inositol-secreting ability and subsequently collecting the product from the culture solution.

CONSTITUTION: The new variant Candida boidinii IP-2 (accession No. 14262 deposited on Biotechnology Industrial Technology Research Institute in Agency of Industrial Science and Technology) having a property secreting the inositol on the outside of the cells is obtained by treating the cells of Candida boidinii TR-1 (accession No. 14261 deposited on Biotechnology Industrial Technology Research Institute in Agency of Industrial Science and Technology) belonging to the genus Candida with N-methyl-N '-nitro-N-nitrosoguanidine by a conventional method, coating the treated cells on a flat plate medium, and subsequently culturing the coated cells at 30°C for two days. This inositol is economically obtained by inoculating the new inositol-secreting varianton a medium, subjecting the inoculated variant to a shaking culture at 30°C for 24hr after a preliminary culture, and subsequently isolating and collecting the accumulated inositol from the culture solution.
