PROBLEM TO BE SOLVED: To achieve the reliability and diversity of pickle product by constructing a pickle refrigerator equipped with many chambers utilizing one refrigerating cycle (compressor).
SOLUTION: This method for controlling the operation of a pickle refrigerator is composed of a pickle refrigerator equipped with one or more chambers for ripening according to diverse kinds of pickles and tastes and the chambers for ripening the pickles are provided with one or more set temperature zones. Any one of temperature zone is determined to determine total ripening time according to the kinds of the pickles, final tastes, etc., for the set temperature. Furthermore, a fixed time, variable set time and dwell time induced from the total ripening time for operating the system are determined and recorded in a microcomputer 10. The temperature in the refrigerator is raised according to the temperature state in the refrigerator in the already determined set temperature zone by operation of heaters 13 and 14 or solenoid valves 11 and 12 are opened so as to operate evaporators 7 and 8 after operating a compressor 16 to lower the temperature in the refrigerator. Thereby, the temperature in the refrigerator is regulated and the optimal ripening and preservation of the pickles can be practiced.
