Abstract:

PURPOSE: To prepare delicious scallion pickled in pear puree, having fruity fragrant taste of pear fruit in addition to the taste of conventional picked scallion, liked also by young people and good for health.

CONSTITUTION: Salted scallion is prepared by mixing scallion with a proper amount of salt, water and optionally a food vinegar and pickling for a prescribed period. A necessary amount of the salted scallion is properly washed with water, drained and dried in the shade. The dried product is immersed in a proper amount of a solution of crushed pear pulp or a solution produced by adding a proper amount of sugar and a gelling substance such as lemon to squeezed pear juice and heating and cooling the mixture. The solution is incorporated with a proper amount of sugar, granulated sugar, honey, etc., at need and the scallion is pickled in the solution for a prescribed period.
