Abstract:

PURPOSE: To obtain the subject food having soft palatability and resistant to hardening even after opening the packaged product by inserting a piece of cheese between sheets of ground fish paste, heating with steam, cooling to attain a specific water content and cutting the product to proper shape.
CONSTITUTION: Ground fish paste is formed in a sheet form. A piece of cheese 2 is sandwiched between a pair of the meat sheets 1 and the obtained laminate is placed e.g. on net conveyors 5, 5', pressed from above and below with separately placed rollers 6, 6' under heating with live steam 3, cooled on a cooling shelf to get a water-content of 41-44% and cut to a proper shape to obtain the objective food.
