Abstract:

PURPOSE: To efficiently obtain an excellent cholesterol-reduced food by treating a food in the presence of a specific enzymic source and then carrying out cholesterol reducing treatment.

CONSTITUTION: A processed food such as meat, fish meat or a dairy product is treated in the presence of or with an enzymic source, preferably phospholipase B, etc., having activity of hydrolyzing ester bonds of phospholipids and then subjected to cholesterol reducing treatment which is preferably cholesterol reductive, oxidative reactions, etc., to afford the objective food.
