Abstract:

PURPOSE: To produce a soysauce abundantly containing nitrogen, glutamic acid and sugars and excellent in savor and sweet taste by using wheat containing a prescribed amount of Durham wheat as the carbohydrate source as a raw material of this soysauce.
CONSTITUTION: The objective soysauce is obtained by steam treating wheat containing ≥20wt.% Durham wheat at 1.0 to 3.0kg/cm2 for 0.5 to 5min or treating the wheat in an extruder in conditions of 130 to 160°C outlet temperature, 50 to 100kg/cm2 and 200 to 500rpm rotational frequency of the screw and using the resultant treated wheat as the carbohydrate source which is a raw material of soysauce.
