Abstract:

PURPOSE: To provide a producing method of an edible vegetable material which is bleached substantially in a dry environment by using an alkali soln. of hydrogen peroxide, and useful as an edible powder obtained by this method to produce a low-calorie vegetable fiber. CONSTITUTION: A vegetable material having <=50% water content under dry conditions is brought into contact with an alkali soln. of hydrogen peroxide of >=8.5pH containing >=100 g/l peroxide so as to be bleached. The bleached material is washed with water and dried.
