Abstract:

To obtain a yellow coloring compound derived by adding an acid to grated radish and keeping it under refrigeration, and to provide a method for producing the coloring compound.

This method for producing a compound expressed by the formula comprises (1) a process in which an acid is added to grated radish, and the mixture is kept under refrigeration to derive the objective compound and (2) a process in which the above-treated matter is extracted with an organic solvent such as MeOH, the extract is concentrated, and the objective compound is isolated using a reversed phase column. An edible coloring matter consists of the compound.
