Abstract:

PURPOSE: To obtain the title filling having high emulsifying stability, free from separation of water and having good preservative property and workability by heating a raw material containing a purified soybean protein obtained by hydrolyzing an alcohol denatured soybean protein and then purifying the hydrolyzed protein.

CONSTITUTION: A raw material containing (A) a purified soybean protein obtained by partially hydrolyzing an alcohol-denatured soybean protein with a protease until a ratio soluble to trichloroacetic acid becomes 8-35% and removing an insoluble material, (B) oils and fats having solid fat content being 7-11% at 5°C and 4-8% at 35°C, (C) reducing starch saccharified material and (D) processed starch is heated to provide the aimed filling. Furthermore, (E) a taste ingredient and coloring agent are preferably further added to the above- mentioned material.
