Abstract:
To obtain a new gelan lyase acting on gelan to produce gelan-derived decomposition products suitable for foods and medicinal materials, by cultivating microorganisms.
This enzyme, which is obtained by cultivation of symbiotic bacteria consisting of Sphingobacterium multivorum (FERM P-15441) and Flavobacterium multivorum (FERM P-15440), is a new gelan lyase having the following physicochemical properties: (1) having capability of cutting tetrasaccharide units from the end of gelan; (2) having the optimum pH at 7 to 8; (3) having the optimum action temperature at 25 to 45°C; (4) showing enzyme deactivation of 50% (at 50°C for 10min) and ≥95% (at 70°C for 10min. 9; (5) having molecular weight of 140000 (SDS-PAGE).
