Abstract:

PROBLEM TO BE SOLVED: To obtain new Lactococcus lactis subsp. cemoris bacterial strain having resistance performance to cholic acid, capable of directly utilizing as propiotic lactic acid bacterium and useful as a starter, etc., for production of cheese.
SOLUTION: This new lactic acid bacterium strain is Lactococcus lactis subsp. Cremoris bacterial strain, preferably C41-2 strain (FERM P-16643), having cholic acid resistant performance. Since the C41-2 strain has high cholic acid resistance, compared with parent strain MG1363, the strain can be directly utilized as a propiotic lactic acid bacterium or utilized as a starter lactic acid bacterium, etc., in producing fermented milk product such as cheese. The new lactic acid bacterium strain is obtained by inoculating Lactococcus lactis subsp. Cremoris MG1363 into a culture medium and repeating similar procedure until concentration of sodium cholate become final 14 mM concentration while stepwise increasing the concentration of sodium cholate.
