PURPOSE: To enable quick proliferation of the subject bacteria immediately after the start of fermentation and to surely promote the lactic fermentation by using Lactobacillus KB-141 strain exhibiting lactic fermentation activity in both aerobic and anaerobic atmospheres.
CONSTITUTION: Lactobacillus KB-141 (FERM P-10474) which is a lactic bacteria belonging to genus Lactobacillus and having specific mycological properties can be rapidly proliferated in aerobic condition as well as in anaerobic condition. The lactic acid accumulation amount and accumulation rate of the strain are comparable to those of standard strain. The pH of the medium is lowered by the lactic acid and the strain has sufficiently high lactic fermentation capability. When a number of KB-141 strains are mixed to a raw material such as pasturage, the strain is quickly proliferated immediately after the start of fermentation and the proliferation of other bacteria such as putrefying bacteria can be suppressed even at the initial stage of preparation. Accordingly, the subject lactobacillus is effective in preventing the deterioration of the taste of silage, etc., caused by the proliferation of anaerobic butyric acid bacteria. The present lactobacillus is extremely useful for the stale preparation a high-quality silage, fermented sausage, pickles, etc.
