Abstract:

PURPOSE: To provide a new leavening composition consisting of the combination of acid calcium phosphate and a carbonate component, which is useful as a leavening composition for the dough or the batter of a material for baking, especially, bread, a cake, a biscuit or a cookie, etc.
CONSTITUTION: The leavening composition consists of acid calcium pyrophosphate and the carbonate component as an acid component and acid calcium pyrophosphate is especially produced by reaction between monocalcium phosphate or its one hydrate and phosphate with an exessive large mol in high temp. The composition indicates the max. speed of carbon dioxide discharge caused for about 40 minutes from a time when about 17 minutes elapses after first mixing in a dough reaction speed (DRR) test and max. speed is at least twice as much as that in the final mixing time of the test.
