To provide a new protein usable in a convenient method for preparing arabinobiose.
The protein of the invention is a protein which has an exo-arabinanase activity. The exo-arabinanase activity is a function isolating arabinose dimer from a non-reducing end of a straight chain L-arabinan, and arabinobiose is easily and inexpensively prepared from arabinobiose-containing polysaccharides derived from agricultural waste, etc. The protein exhibits arabinobiose-transferring activities which adds the isolated arabinobiose to other material and a new arabinobiose added material can be produced by using the activity. The protein exhibits a joint activity with a protein having arabinofuranosidase activity, and enhances the production efficiency of the arabinose by decomposition of polysaccharides containing arabinose.
