To provide a new reconstitutable concentrated extract which has a characteristic taste and flavor of chicken or the like, can be distributed (stored) at normal temperature, and has good normal temperature storability, by extracting water-soluble ingredients contained in chicken or the like as they are, and then treating the ingredients contained in the extract without losing the original characteristics, and to provide a method for producing the same.
This extract characterized by using a material containing at least edible portions as a raw material and having the following treating processes as components; a process for rapidly extracting with hot water under a slightly pressurized state, a process for holding useful ingredients in the extract and rapidly and continuously concentrating the extract at low temperature, a process for preliminarily suitably treating the concentrate and eliminating bacteria with a membrane at low temperature, and a process for packing the bacterium-eliminated concentrate at ordinary temperature in an aseptic state, and the method for producing the same.
