Abstract:
PROBLEM TO BE SOLVED: To obtain a new semi-fermented tea drink packed in a closed container and especially matched to the recent favors of consumers by adding a specific amount or more of Pouchung tea to a tea raw material before decocted.
SOLUTION: This semi-fermented tea drink is obtained from a tea raw material mixed with ≥50 wt.% of Pouchung tea before the tea raw material is decocted. The addition of ≥50 wt.% of the Pouchung tea to the tea raw material before the decoction can give the semi-fermented tea drink packed in closed containers and having reduced bitter and astringent tastes and increased refreshing mouth touch. Therein, the containers are preferably PET bottles, and it is preferable that the content of tannin in the tea drink is controlled to 20-60 mg/100 ml.
