Abstract:

To provide the new strain of new Lactobacillus plantarum, producing an antifungal substance inhibiting the proliferation of mold (exhibiting an antifungal property).

Provided is the Lactobacillus plantarum which produces an antifungal substance inhibiting the proliferation of molds, has cysteine auxotrophy, and does not have phenylalanine auxotrophy and tryptophan auxotrophy. Provided are the food, the drink and the bread-producing yeast each containing the Lactobacillus plantarum. Provided is the bread-producing method for producing the bread with the Lactobacillus plantarum.
