PURPOSE: To produce a new vinegar having a mild and light sour taste and flavor in combination with a body condition-controlling function by acetic acid fermentation of a mixture composed of galacto-oligosaccharide-containing saccharides or fructo-oligosaccharide-containing saccharides and alcohol for vinegar-production use.
CONSTITUTION: A new vinegar produced by acetic acid fermentation of a mixture between galacto-oligosaccharide-containing saccharides or fructo- oligosaccharide-containing saccharides and alcohol for vinegar-production use, containing organic acids such as gluconic acid and flavor components such as methyl acetate and propionic aldehyde respectively generated by the fermentation and suitable for application to various fields such as domestic use, industrial use, processing subsidiary raw materials, seasonings, health foods and medical drugs.
