To provide a non-emulsified dispersed dressing whose oil phase portion can uniformly be dispersed for a long period.
This non-emulsified dispersed dressing is characterized by containing deacylated gellan gum and xanthan gum, preferably the xanthan gum having an acetyl group content of ≤1 %. It is further preferable that the contents of the deacylated gellan gum and the xanthan gum are 0.01 to 0.3 wt. % and 0.05 to 0.3 wt. %, respectively, based on the non-emulsified dispersed dressing. It is furthermore preferable that native type gellan gum or carrageenan is together used. The pH of the non-emulsified dispersed dressing is preferably 2.3 to 4.5. A method for producing the non-emulsified dispersed dressing comprises adding the deacylated gellan gum and the xanthan gum to a liquid having an aqueous phase portion and an oil phase portion to form the gel, and then grinding the gel.
