Abstract:
PROBLEM TO BE SOLVED: To provide a novel non-gelatin viscoelastic composition which, when forming gummy candies, suppresses peculiar odor by not using gelatin, does not contain an allergen, has religious taboos taken into consideration, and allows high freedom in viscoelasticity design, and a method for producing the same.SOLUTION: A starch viscoelastic material is obtained by mixing saccharides, water-soluble starch obtained by making a viscosity of gelatinized starch lowered by supersonic irradiation, and water. A method for producing a non-gelatin viscoelastic composition comprises, when preparing the starch viscoelastic material, a saccharide solution preparing step by dissolving saccharides in water to obtain a saccharide solution; an addition step of adding water-soluble starch into the saccharide solution; and a kneading step of kneading the saccharide solution and the water-soluble starch. The non-gelatin viscoelastic material contains the saccharides which are at least one or more selected from monosaccharides, disaccharides, oligosaccharides, dextrins, or sugar alcohols, where the saccharides include physically processed starch processed from waxy corn starch, and jelly strength of the starch viscoelastic material is 0.1 to 25 N/cm.SELECTED DRAWING: Figure 1
