Abstract:
PURPOSE: To obtain a nonfat pastry mixture consisting of individually packaged components of a mixture of egg white sugar, a starch mix for preliminary gelatinization, flour, etc., in such a manner that when those components are mixed, a mixture containing each specified proportion of starch, sugar and flour and giving good taste without containing fat can be obtd. CONSTITUTION: This mixture has individually packaged components of (A) a mixture of egg while sugar in 1:2 to 2:1 weight ratio of egg white to sugar, (B) one or more kinds of starch mixture for preliminary gelatinization (preferably a multipurpose enzyme mixture having amylase activity and protease activity is added by 10 to 5000dpm of the starch), (C) wheat flour (including a leavening such as a baking powder, monoglyceride and monoglyceride hydrate). The amts. of these components are controlled in such a manner that the amt. of starch is 1/2 to 1/4 of the amt. of sugar and the amt. of flour is 1/2 to 2 times of the amt. of sugar. A baking powder and leavening may be included in the starch.
