Abstract:

PURPOSE: To obtain the subject foods having excellent stability of quality, useful for the maintenance of health, exhibiting bright green color, emitting desirable fragrance and having good taste and flavor by compounding a juice of green leaves of a green vegetable.
CONSTITUTION: These foods are prepared by compounding squeezed juice of green leaves of a green vegetable (preferably fresh stalk or leaf of young barley harvested before ripening), its dried powder or an antioxidation substance extracted therefrom. The antioxidation substance is preferably produced by extracting the juice or dried powder with water and n-hexane, extracting the water-soluble component or a n-hexane-insoluble component with 15-50% hydrated ethanol, adsorbing a component soluble in the hydrated ethanol to an adsorbent and eluting the adsorbed component with a hydrated methanol.
