Abstract:
To provide noodles excellent in texture and having good taste by containing soybean curd puree having a specific physicochemical properties.
This noodle contains soybean curd puree having physicochemical properties that a) the viscosity is 20-3,000 Pa.s, b) the dynamic storage modulus of elasticity is 0.2-600 Pa, c) the dynamic elasticity loss is 0.2-250 Pa and d) the average particle size included in the soybean curd puree is 2-15 μm and 90% particle size is ≤35 μm.
