This noodle manufacturing machine has a rolling device 1 rolling noodles between a rolling gap G, a measuring means 16 measuring a weight of the noodles rolled in the rolling device 1, a varying means 4 varying the rolling gap G and a control means 7 controlling the varying means 4 by comparing a measured value of the measuring means 16 with a prescribed value. The noodle manufacturing machine further has a splitting device 8 splitting the longish noodle rolled by the rolling device 1 along the carrying direction and a cutting device 10 cutting the noodles split by the splitting device 8 at every prescribed lengths, and the measuring means 16 is preferably constituted so as to measure the weight cut by the cutting device 10.
