This noodle strip-forming apparatus 1 for feeding dough 3 into a space between a pair of rough noodle strip-rolling rollers 2 from the upper side, rolling the dough 3 by the rotation of a pair of the rough noodle strip-rolling rollers 2 to form a rough noodle strip 4, sending out the rough noodle strip 4 with a lower conveying conveyer 11, and further rolling the rough noodle strip 4 by the rotation of a pair of noodle strip-rolling rolls 5 to form the noodle strip 6 is characterized by disposing a dough stopper 8 in a state capable of being moved from a position for closing the space between a pair of the rough noodle strip-rolling rollers 2 to a retreated waiting position below a pair of the rough noodle strip-rolling rollers 2, and closing the space between a pair of the rough noodle strip-rolling rollers 2 with the dough stopper 8 before the rotation of a pair of the rough noodle strip-rolling rollers 2.
