Abstract:

To provide instant noodles suppressed in getting soggy by boiling, reconstitutable with hot water in a short time, and having after reconstituting with hot water, palate feeling close to that of usual raw noodles, and to provide a method for producing the instant noodles.

The instant noodles contain wheat flour and 1-kestose. The content of 1-kestose is 0.1-10 mass% based on the total 100 mass% of wheat flour and 1-kestose.
