Abstract:

PURPOSE: To obtain edible cellulose get having a desired thickness and good texture by inoculating and culturing an acetic acid bacterium capable of producing cellulose gel in a medium mainly containing vegetable paste, vegetable essence or vegetable fractionation product.

CONSTITUTION: An acetic acid bacterium capable of producing cellulose gel, for example, Acetobacter xylium F-88 (FERMBP-4407), is inoculated to and cultured in a medium containing 0.2 to 5wt.%, calculated as vegetable, of a preparation from vegetables such as vegetable paste, vegetable essence or fractionated product of vegetable essence. As vegetables, are cited vegetables in Cucurbitaceae such as cushaws, water melons or the like, preferably.
