PURPOSE: An emulsifying agent composition having improved quality betterment effect on a starch-containing food, shelf stability and handability, obtained by powdering a high-purity composition of fatty acid monoester of glycerol having a specific iodine value, followed by heat-treatment.
CONSTITUTION: 80W95wt% high-purity composition of fatty acid monoester of glycerol consisting of 65W85wt% saturated fatty acid monoester of glycerol, preferably 12W22C saturated fatty acid monoester of glycerol and 35W15wt% unsaturated fatty acid monoester of glycerol, preferably 16W22C unsaturated fatty acid monoester of glycerol, having an iodine value 10W40, is blended with 5W 20wt% fats and oils having a melting point not lower than 45°C, preferably not lower than 50°C in molten state, powdered, and heat-treated in a temperature range from not lower than 45°C to a temperature not melting the blend for not less than 30min.
