Abstract:

PURPOSE: To provide an oil and fat composition, useful as a softening agent for meat, by adding a proteinase to oil and fat.

CONSTITUTION: The objective composition is ovtained by dissolving or dispersing a proteinase obtained from arbitrary source in an edible vegetable oil, animal oil or their mixture, preferably vegetable oil rich in unsaturated fatty acids and liquid at normal temperature. The amount of the ptoteinase is about 0.05W0.5% for an oil and fat composition for softening beef, and is about 1W5% for an oil and fat composition which is diluted before use.
