Abstract:
PROBLEM TO BE SOLVED: To obtain an oil body in a separated/recovered state, to obtain a raw material of a dried nanocapsule main body and to use the raw material for stabilization of a hydrophobic substance such as oils and fats, etc.
SOLUTION: This oil body-like nanocapsule fraction is derived from an oleosin protein-containing oil and fat seed, preferably from soybean, preferably ≥10% based on the whole protein of oleosin protein or an oil body-like nanocapsule fraction which is its dried substance. This shell-like nanocapsule is obtained by removing a neutral lipid from an oil body-like nanocapsule fraction comprising an oleosin protein-containing oil and fat seed, preferably from soybean, preferably ≥10% based on the whole protein of oleosin protein or an oil body-like nanocapsule which is its dried substance, preferably a shell-like nanocapsule for hydrophobic substance inclusion, to be more concrete, one or more kinds of shell-like nanocapsules for oil and fat inclusion arbitrarily selected from a rapeseed oil, a fat-soluble vitamin, a fish oil, etc. The shell-like nanocapsule does not contain at least Gly m Bd 30K among allergen proteins of soybean.
