Abstract:
PROBLEM TO BE SOLVED: To provide a fat composition for a foamable cream having less unfavorable influence on health by having an amount of trans-fatty acids and also an amount of saturated fatty acids reduced, which has excellent vibration resistance in a state of liquid cream before foam formation, and to ensure that such a fat composition or foamable cream exhibits excellent foamability at the time of foam formation.SOLUTION: Provided is a fat composition for a foamable cream containing, as constituent fatty acids, 60 mass% or less of all saturated fatty acids, 1 mass% or less of trans-fatty acids, and 15 mass% or less of polyunsaturated fatty acids, where the following fat (A) is contained in an amount of 20 to 90 mass%. The fat (A) is a low temperature flexible fat obtained by transesterification of a vegetable oil fat, the transesterification being conducted so that the fat (A) comprises, as constituent fatty acids, 30 to 80 mass% of monovalent unsaturated fatty acids having 18 carbon atoms, 5 mass% or less of saturated fatty acids having 12 carbon atoms, 15 mass% or less of polyunsaturated fatty acids, and a total 20 to 40 mass% of saturated fatty acids having 16 carbon atoms and saturated fatty acids having 18 carbon atoms. When a specified amount of the fat (A), which is flexible at a low temperature, is blended, vibration resistance, and whipping characteristics and shape retention at the time of foam formation can be improved even when the amount of the polyunsaturated fatty acids is made 15 mass% or less.
