Abstract:
PROBLEM TO BE SOLVED: To provide: an oil and fat composition which remains and has presence as a skeleton is strong when using butter cream, margarine, or shortening for filling, nappe or topping for confectionery bread such as cake or bread, is good in mouth melting when taken, is dissolved at the same time when taken as filling, nape or topping together with confectionery bread such as cake or bread, especially sponge cake and is compatible to confectionery bread dough; and foods using the same.SOLUTION: There is provided an oil and fat composition used as butter cream, margarine, or shortening for filling, nape or topping for confectionery bread, having content of triglyceride, in which lauric acid binds to a 2-position, of 15 to 30 mass% based on an oil and fat total amount, content of triglyceride P2O of 4 to less than 12 mass% based on the oil and fat total amount and a total amount of triglyceride LLL, MLL and LML of 3.5 to 10 mass% based on the oil and fat total amount.SELECTED DRAWING: None
