Abstract:
To provide an oil-and-fat composition that is obtained by stably dissolving an emulsifier in an oil and fat and is suitable as a modifier of various food, which is easily emulsified and dispersed by mild stirring to form an oil-in-water-type emulsion when mixed with a seasoning liquid containing a salt content, and the emulsion exhibits excellent emulsion stability even at high temperature.SOLUTION: An oil-and-fat composition contains 70.0-95.6 mass% of an edible oil, 4.0-12.0 mass% of diglycerol monooleate, 0.3-2.0 mass% of polyglycerol condensed ricinoleate, and 0.1 mass% or more of lysophosphatidylcholine, where a content of the diglycerol monooleate and a content of the lysophosphatidylcholine satisfies the following expression: [content of diglycerol monooleate]≥[content of lysophosphatidylcholine]×2.SELECTED DRAWING: None
